Light Recipes with Parmigiano Reggiano: 5 Tasty and Healthy Dishes

We now know very well that Parmigiano Reggiano is a good and healthy food. Extremely rich in nutritional properties, it is often recommended even for low-calorie diets and specific diets for athletes. Since the Holidays have just passed and it's time to get back in shape, we've decided to share some ideas for light recipes with Parmigiano Reggiano, to stay in shape with taste!

  1. Parmesan Zucchini: This is a very easy to prepare but very tasty side dish. Just slice the zucchini into rounds, arrange them in a lightly oiled baking dish, season with salt and pepper, then sprinkle with grated Parmigiano Reggiano mixed with breadcrumbs and bake until gratinéed.
  1. Cardoon flans with Parmesan sauce: Cardoons are a true winter delicacy. Our advice is to blanch them and then bake them for a few minutes, then season them with a light Parmesan cream (perhaps prepared without cream). Prepared this way, they can be a single dish for a healthy and tasty lunch break.
  1. Erbazzone: This is a typical Reggio Emilia savory pie where the dough (made from flour, oil, water, and salt) is filled with Swiss chard, flavored with onion, aromatic herbs, and Parmigiano. If we want to prepare a light version, avoid using lard and shortenings, but limit ourselves to vegetable fats like good extra virgin olive oil for the base dough.
  1. Gratinéd Broccoli: Here's a great idea for a tasty, healthy, and low-calorie winter side dish. An easy and quick recipe suitable for the whole family. After blanching the broccoli, simply gratinée them in the oven, sprinkled with grated Parmigiano Reggiano and freshly ground black pepper.
  1. Zucchini, potato, ricotta, and Parmigiano cake: an elegant and pleasant main course, which can also be served in individual portions. Prepare small cakes made of layers of boiled and sliced potatoes, zucchini, and sieved ricotta. Bake them in the oven at 180 degrees for 8 minutes, then serve with Parmigiano Reggiano shavings.
