Fancy a tasty snack but don't feel like going out to shop?
No need to panic, this recipe only requires 2 ingredients: eggs, grated Parmigiano Reggiano, and vegetable oil.
Perfect for an aperitif or to accompany an appetizer, Parmigiano pearls are a crunchy finger food that everyone loves and will save you in a pinch when the fridge is empty and you don't know what to prepare.

Ingredients and method

Take two eggs and separate the whites from the yolks. Set aside the yolks for other preparations, nothing goes to waste!
Calculate 2 egg whites for every 100g of grated Parmigiano Reggiano. With this quantity, you will get more or less 15 pearls, depending on their size.
Preparation is extremely easy and quick. Mix the two ingredients with a fork or spatula. Once you have a homogeneous mixture, form 1-2 centimeter balls with your hands.
While you are shaping the balls, heat sunflower or peanut oil in a pot and as soon as they are ready, drop them into the boiling oil until golden.
Drain them, remove excess oil with a bit of paper, and eat them while still hot. They are so inviting you'll want to make more!

How to flavor Parmigiano Pearls?

The pearls don't need salt, because Parmigiano provides all the flavor they need. To give the dish your chef's touch, you can add a pinch of paprika, thyme, or your favorite spices to the mixture. Try different combinations and find your favorite!
