What are burritos?

Burritos are flour tortillas filled with various ingredients such as meat or chili, beans, and cheese. Their name comes from burro = donkey in Spanish, because they were sold from carts pulled by donkeys. In short, the first ancestor of modern street food.
It's a typical Tex-Mex dish and therefore very flavorful and spicy, and we have an idea to "Italianize" it using Parmigiano Reggiano.
To bind the ingredients well, a liquid element like a sauce, or even better a cream, is needed. And that's where we got the inspiration to use Parmesan cream!

What you need to prepare burritos

No offense to our Mexican friends, but to speed up the process and replace tortillas, you can use piadine. If you want to make them at home, you'll need flour, water, seed oil, and salt.
For the meat, you can use beef, as in the traditional recipe, or pulled pork or chicken.
Proceed with slow cooking in tomato sauce and get creative with spices: pepper, garlic, paprika, mustard powder, and whatever else you fancy, being careful not to overdo the quantities.
The meat is ready when it's very tender and the tomato has completely lost its acidity.
You can add the beans directly to the meat or prepare them separately. The most suitable beans for this recipe are kidney beans.

Parmesan cream: the finishing touch

Usually, guacamole, the spicy avocado-based sauce, accompanies burritos.
But we are here to reinterpret the recipe, which is why we suggest adding Parmesan Reggiano cream instead! In this article you'll find the complete recipe.
Place some lettuce leaves, meat, beans, and a ladleful of Parmesan cream in the center of the spread-out tortilla/piadina.
At this point, close the burrito: fold two sides towards the center, cover the ingredients in the middle with a third side, and roll it up. To seal everything, pan-fry the burrito for a few minutes, resting it on the folded side.
