The second life of Parmesan rinds

The step from scrap to ingredient is shorter than one might imagine. Before using the rind, remember to clean it: rinse it under running water, dry it well, then remove any external markings with the help of a grater.

At this point, there are many possible, often truly interesting, reuses for Parmesan rinds. Let's discover them together:

  1. Flavor enhancer for broths and soups: The most classic and traditional use of Parmesan rinds is in broths, soups, and minestrone, to which they lend a more intense and flavorful taste. If you prepare a meat broth with Parmesan rind, you can even eat it at the end of cooking: softened by the long cooking in broth, you'll discover how delicious it can be!
  2. Ingredient for meatballs: Soften the Parmesan rinds by soaking them in milk. At this point, they can be chopped and used to enrich meat meatballs.
  3. Ingredient for risottos: If you have Parmesan rinds soaked in broth or water, you can use them instead of grated Parmesan to cream risottos.
  4. Grilled, with vegetables: Another way to eat Parmesan rind, besides cooking it in broth, is to grill it, naturally on the harder side, and serve it hot with roasted vegetables.
  5. Fried: Frying is always a tasty solution! After cleaning it, dip the rind in beaten egg and flour, then fry it in seed oil. A surprising delight.
  6. For Parmesan air, as Massimo Bottura does: One of the world's greatest chefs has dedicated one of his most famous recipes to Parmigiano Reggiano, the "five ages of Parmesan". One of these, consisting of 50-month Parmigiano Reggiano air, is prepared with the rinds.
