Start by following the Parmesan crisp recipe and prepare 4 crispy Parmesan discs per person.
At this point, you can choose how to assemble your millefeuille.
- Parmesan millefeuille with mushrooms and ricotta
Clean the mushrooms thoroughly, then slice them and sauté them in a pan with oil, salt, and pepper. Drain them well. Assemble your millefeuille by alternating the Parmesan crisps with a little cooked mushrooms and some ricotta flakes worked with a fork.
2) Parmesan millefeuille with puntarelle and prosciutto
