1) Parmigiano and Walnut Muffins

In a bowl, whisk one egg with 230 ml of milk and a pinch of salt. Pour in 30 g of oil, then 300 g of sifted flour and 2 teaspoons of instant yeast.

Add about 40 g of walnut kernels, mix well and combine the mixture.

Fill the muffin liners with the mixture and bake in a preheated oven at 180°C for about half an hour, until golden.

2) Savory Parmigiano Plumcake

Melt 75 g of butter in a saucepan and let it cool; dissolve ½ cube of fresh yeast in 70 g of warm milk and set aside.

Beat 3 eggs with a whisk until frothy, then add the melted butter, the yeast dissolved in milk and 60 g of grated Parmigiano Reggiano and continue mixing for a few minutes. Season with salt and pepper. Add 250 g of sifted all-purpose flour.

Let it rise for an hour and a half, then knead the dough again for a few minutes and place it in the plumcake mold. Put the dough in the switched-off oven for another 50 minutes, then bake for 30 minutes at 180°C.

3) Parmigiano and Dried Fruit Sticks
