There are many different recipes featuring the King of Cheeses, Parmigiano Reggiano. Today we're talking about an unusual preparation, which has nonetheless become a common sight in many high-end restaurants – a recipe you can also replicate at home to surprise and delight your guests. We're talking about Parmigiano Reggiano ice cream!

  1. Pour the cream and sugar into a large non-stick pot.
  2. Bring the cream to a boil, stirring regularly.
  3. Once it reaches a boil, remove the pot from the heat and add the grated Parmigiano Reggiano.
  4. Stir until the Parmigiano has completely melted.
  5. Let the mixture rest until completely cooled, then transfer it to an ice cream maker to turn it into ice cream.

How to make Parmesan ice cream without an ice cream maker

If you don't have an ice cream maker, don't despair; Parmesan ice cream can still be made at home. How? Once the cream, sugar, and Parmesan mixture has cooled, let it rest for 5 hours on the coldest shelf of the refrigerator. Then transfer it to the freezer for another five hours, stirring the mixture every half hour, and finally to the refrigerator for one hour before serving.

Parmesan Ice Cream with Thermomix

If you have a Thermomix, you can use this valuable appliance to prepare your Parmesan ice cream. How? Grate the Parmigiano for about 20 seconds at turbo speed. Add the other ingredients and cook for 10 minutes at 70° speed 2. Pour the mixture into an aluminum pan and place it in the freezer until frozen. Break the ice cream into pieces, place them in the mixing bowl, and churn for about 40 seconds at speed 4/7.

Savory Parmesan Ice Cream

You can also prepare a savory version of Parmesan ice cream. In this case, completely omit the sugar and add a pinch of white pepper during preparation.

How to serve Parmesan ice cream

Parmesan ice cream can be served with a few drops of Balsamic Vinegar, with sour cherries in syrup, or even paired with savory dishes, such as prosciutto and figs, or with something delicious and unusual like fried Bolognese tortellini. Another interesting pairing is proposed by Sale&Pepe: bread croutons with thinly sliced radishes, Parmesan ice cream, and pepper.
