Parmigiano Reggiano is not only the quintessential cheese for seasoning fresh pasta or for enjoying on its own, perhaps paired with balsamic vinegar or honey, once it reaches the right aging. It is a dairy product with truly versatile characteristics and a unique aromatic profile, making it suitable for many other preparations. Today, we're talking about Parmigiano crisps, how to prepare them, and how to fill these typical crunchy cheese baskets.
Parmigiano Reggiano crisps are crunchy cheese wafers, shaped like baskets, which can be filled with many ingredients and are ideal to serve as an appetizer or as individual portions for an aperitif. They can also be molded into a flat shape, becoming perfect chips ideal as finger food for an elegant buffet.

Parmigiano Crisp Recipe
Ingredients:
- 150 g Parmigiano Reggiano
- Baking paper
Preparation:
- To prepare Parmigiano crisps, cut baking paper into squares of about 20 cm, then place a generous spoonful of grated Parmigiano Reggiano in the center of each.
- Using the back of the spoon, spread the cheese into a uniform layer, creating a circle. Place the baking paper with the cheese in the microwave, one sheet at a time, and microwave for about 1 minute at maximum power. Remove when the cheese is homogeneously melted.
- For those without a microwave, a classic electric oven can also be used. In this case, cook the cheese at 180° for a few minutes; remove when the edges of the baskets are lightly golden.
- While the crisps are still pliable, take them and place them in bowls 7-8 centimeters in diameter, then quickly shape them by pressing the cheese towards the bottom with the back of a spoon until you achieve the desired shape.
- Let cool and fill as desired.
