    12 months is the minimum aging that any PDO Parmigiano Reggiano must have. At this age, Parmigiano Reggiano is still very young, and has not yet fully developed all its potential, which we will find instead in more advanced ages. The paste is still quite tender, while the flavour is harmonious, delicate and pleasantly sweet, with interesting hints of fresh milk, yogurt and fresh fruit. It is perfect as an aperitif accompanied with sparkling white wines or to give a new and intense flavour to salads and other cold dishes.

    Organoleptic characteristics  

    • Almost imperceptible tyrosine, low graininess and low hardness
    • High deformability, friability and low solubility
    • Lactic (hints of fresh milk and yogurt) and vegetable (grass and boiled vegetables) flavour
    • Sweet and slightly acid taste

    Try it with a fresh Lambrusco Emiliano, even better if combined with an artisan strawberry compote and a good balsamic vinegar.

It is the youngest seasoning, still underdeveloped in all its nuances. Its sweet taste and delicate hints of fresh milk make it perfect for all types of use. Our 12-month aged Parmigiano Reggiano, thanks to the particular production method, is rich in high biological value proteins, vitamins and mineral salts.     Our 18-month Parmigiano Reggiano has a noticeable lactic base that gives a fresh and always delicate flavour. The paste is clear, with a delicately sweet flavour reminiscent of cream, and the typical aromas of this type of cheese begin to be present. The paste is still soft, but with a good friability and graininess. 18-month Pamrigiano Reggiano is excellent as an aperitif combined with raw vegetables, such as celery and cherry tomatoes.  

    Organoleptic Characteristics  

    • No or very small holes with moderate graininess.
    • Paste of medium consistency, moderately crumbly and elastic.
    • Scent notes of butter, milk, yogurt and fresh fruit
    • The flavour is a perfect balance of flavour, acidity and sweetness

    Try it paired with dried fruit and nuts or for a normal aperitif. Excellent with a fresh glass of Malvasia and accompanied with a red onion preserve.

    24-month Parmigiano Reggiano is perfect for a first tasting: it is at this age that Parmigiano Reggiano begins to express all those organoleptic characteristics that have made it one of the most consumed cheeses in the world. The perfect balance between sweet and salty and the crumbly and grainy straw yellow paste make it perfect for all traditional Italian dishes and excellent to pair with medium-bodied wines. Its distinctly crumbly texture makes it perfect for grating and becoming a tasty filling for fresh pasta, erbazzone (a traditional pie), lasagne and other typical Reggio dishes.

    Our 48-month Parmigiano Reggiano contains all those precious characteristics that only time can develop. The long aging period gives this cheese a more compact and irregular appearance, together with an intense amber colour. The flavour is more complex and pungent than previous ages, with pleasant spicy notes, of hay and dried fruit and nuts. It is perfect for those who love particular and uncommon tastes, and is excellent as a gift. In the kitchen it is perfect for tasting sessions, perhaps accompanied with well-structured and meditation wines.

    Organoleptic Characteristics  

    • Compact and very crumbly paste.
    • On the nose it has more developed hints, such as spices, dried fruit and nuts and hay.
    • Strong, decisive and slightly pungent flavour.
    • Amber colour.

    Try it with a good glass of fresh Lambrusco or intense and full-bodied wines, such as Barolo or Sauternes. It is excellent to simply taste in shavings, maybe accompanied with sweet preserves and balsamic vinegars. Given its noticeable friability it is also excellent grated as a filling for fresh pasta.

    Parmigiano Reggiano aged 60 months

    Our 60-month Parmigiano Reggiano is aged for 5 years, a time in which it has developed decidedly unique organoleptic characteristics. Its friability is further increased, presenting an amber, grainy and mineralized paste. The flavour is strong and very intense, but never spicy (as happens with other very mature cheeses). The typical aromas of younger ages (milk, yoghurt and hay) leave space for much more complex and marked, woody, smoky, spicy and citrusy scents.

    Organoleptic Characteristics:  

    • Particularly hard and crumbly paste, with very present tyrosine.
    • Hints of spices, wood and citrus on the nose.
    • The flavour is strong and intense, but not excessively.

    Try it paired with a good aromatic honey, seasoned cured meats, jams or balsamic vinegar. The long aging makes it perfect with quite sweet wines, such as Amarone della Valpolicella or Marsala, and with passiti (dessert wine). Also excellent with aromatic wines and spirits, such as Port or Rum.

    Our 100-month Parmigiano Reggiano is a rare and prestigious product, made specifically for true connoisseurs. After more than 8 years of rest, Parmigiano Reggiano has developed a very crumbly and mineral paste, with an almost ochre colour. The flavour is robust and intense, but not excessively salty, and upon tasting it reveals a pleasant and unexpected sweetness. Despite the long aging, it is neither bitter nor spicy. All of the scents of the previous ages have disappeared, leaving space for intense notes of spices, tobacco and cocoa.

    Organoleptic Characteristics  

    • High presence of tyrosine.
    • Very hard, compact and crumbly paste.
    • Evolved hints of spices, tobacco and cocoa.

    Try it on its own or paired with a good Balsamic Vinegar of Modena. It goes perfectly with a glass of high-quality Port.
