The name Strolghino derives from strolga, meaning guess, in the dialect of the Duchy of Parma and Piacenza. It was given this name due to the fact that it was used to predict the optimum aging of other larger cured meats. Another very widespread version of the origin of the name refers to the difficulty of a correct preparation and aging of the product, for which a fortune-teller was needed. Strolghino Salami is made above all from the lean trimmings of the largest hams. In fact, to give the culatello its traditional pear shape it is necessary to trim the piece, and the precious meat that is left over is destined for this niche product. Appearance when cut: bright red/pink in the lean parts and white in the mixed parts, medium grain.
